B. Training on Food Safety Risk Analysis under the Global Health Institute supported by PigRISK researchers

  • Time: 20 – 24 Feb 2017
  • Instructors: Course goal: this course aimed at introducing the participants to real life applications of microbial and chemical risk assessment in foods to provide science-based answers to complex food safety issues in a multidisciplinary setting.

Fernando Sampedro, Center for Animal Health and Food Safety (CAHFS), College of Veterinary Medicine, University of Minnesota; Warangkhana Chaisowwong, Lecturer, Faculty of Veterinary Medicine, Chiang Mai University; and Dang Xuan Sinh, Researcher, ILRI’s PigRISK project and CENPHER-Hanoi University of Public Health, Hanoi, Vietnam

  • Course method: a combination of lectures, practical exercises, scenarios and case-study.
  • Course description: this course provided risk-based and science-based tools to evaluate and mitigate the microbial and chemical risks in a food production chain, from using a farm to fork approach. Participants were divided in small interdisciplinary groups to #OLE_LINK4#OLE_LINK3mimic a real risk analysis team and develop a real-case scenario. The participants followed the risk analysis process as an integral part of a science-based decision-making (risk prioritization, risk assessment, risk management and risk communication) to estimate and manage the food safety risks. The attendants applied different qualitative (hazard analysis, decision matrices) and quantitative (risk prioritization, modelling and web-based software) tools. Main outcomes from the analyses and evaluated potential mitigation options to reduce the risk in a cost-effective way were finally presented by participants
